Speaker Biograghy: Michael has managed Marqette Food Hall & Bar in Dublin Airport since it opened in 2015, and has brought a wealth of experience and expertise to the operation. Marqette has firmly put its mark of excellence on the airport food and beverage sector, winning numerous national and international awards in just two short years. The most recent award was Airport Food Hall of the Year 2017 at the prestigious FAB awards in Toronto, at which Michael was also a noted speaker. Michael now is looking to further develop Marqette in Ireland, the UK, Europe and the USA. The initial expansion of Marqette includes a state-of-the-art food hall and bar situated in the former church at St Andrews in Dublin’s city centre, which is due to open next year.

Synopsis: This wide-ranging panel discussion will include a variety of viewpoints that will help attendees understand the whys and what works when it comes to creating sense of place in concession operations. Participants will include an airport concession manager, a small food service operator, a designer, a retail operator and an airport-focused style and fashion blogger. Does sense of place matter and, if so, how do/should different businesses express it? What do the public see and what do they care about? This panel discussion will answer these questions and more.
